Kala Paplet Recipes: Masala Tawa Fry, Achari Salan and Green Grill

Kala Paplet Recipes: Masala Tawa Fry, Achari Salan and Green Grill

Kala Paplet is made for big flavours. Its firm, meaty flesh and slightly rich taste carry red chilli, tangy achar spices and smoky char far better than delicate white fish. Most Pakistani families cook it whole – scored, rubbed with masala and fried until the skin crackles – but thick slices are equally good in a curry. Here are three recipes for Black Pomfret (Kala Paplet), including a lighter grilled option.

Preparing Black Pomfret

  • Snip off the sharp fin edges and the tips of the tail with kitchen scissors – they burn easily and can be sharp.
  • Rinse briefly and pat the fish dry inside and out.
  • For whole fish, make two or three deep diagonal cuts on each side, down to the bone. This lets masala in and helps the thick centre cook through.
  • Marinate in the fridge, not on the counter.

Recipe 1: Whole Masala Tawa Fry

The signature way to eat Kala Paplet: a crisp, red-spiced crust over firm, juicy flesh.

Serves: 4  |  Marinating: 30 minutes  |  Cooking: about 25 minutes

Ingredients

  • 2–3 medium Black Pomfret, Whole and Gutted, scored
  • 1½ tbsp ginger-garlic paste
  • 2 tsp red chilli powder
  • 1 tsp Kashmiri chilli powder
  • 1 tsp ground coriander
  • 1 tsp roasted cumin powder
  • ½ tsp turmeric
  • 1 tsp ajwain (carom seeds)
  • 1 tbsp tamarind (imli) pulp or juice of 1 lemon
  • 2 tbsp rice flour or semolina (sooji), for coating
  • Salt to taste
  • Oil for shallow frying
  • Chaat masala, lemon wedges and sliced onions to serve

Method

  1. Mix ginger-garlic, all the spices, ajwain, tamarind or lemon and salt into a thick paste. Add a teaspoon of oil if it is too dry.
  2. Rub the paste all over the fish, inside the belly and deep into the cuts. Refrigerate for 30 minutes.
  3. Just before frying, dust both sides lightly with rice flour or sooji. This gives an extra-crisp skin.
  4. Heat a heavy tawa or wide frying pan on medium heat with enough oil to come a little way up the sides of the fish.
  5. Lay the fish in gently, away from you. Fry for 6–8 minutes without moving, until the underside is deep brown and crisp.
  6. Turn carefully with a wide spatula and fry the other side for another 5–7 minutes.
  7. Check at the thickest part near the spine: the flesh should be opaque and lift away easily. Give it a few more minutes on lower heat if needed.
  8. Drain briefly, sprinkle with chaat masala and serve with lemon, onions, raita and roti or plain rice.

Tip: Tamarind gives a deeper, slightly sweet tang that suits the richer flesh of black pomfret better than lemon alone.

Recipe 2: Achari Black Pomfret Salan

The firm slices of Kala Paplet hold their shape in gravy, making them ideal for this tangy, pickle-spiced curry.

Serves: 4  |  Cooking: about 35 minutes

Ingredients

  • 1 kg Black Pomfret Slices
  • 5 tbsp oil (mustard oil is traditional)
  • 1 tsp mustard seeds (rai)
  • 1 tsp fennel seeds (saunf)
  • ½ tsp kalonji (nigella seeds)
  • ½ tsp methi dana (fenugreek seeds)
  • 1 tsp cumin seeds
  • 2 onions, finely chopped
  • 1 tbsp ginger-garlic paste
  • 3 tomatoes, puréed
  • 1½ tsp red chilli powder
  • ½ tsp turmeric
  • 1 tsp ground coriander
  • 3 tbsp plain yoghurt, whisked
  • 1 tbsp lemon juice or a little tamarind
  • 6–8 green chillies, slit
  • 1 cup hot water
  • Salt to taste and fresh coriander

Method

  1. Rub the slices with salt and turmeric and keep them in the fridge.
  2. Heat the oil until hot (if using mustard oil, let it smoke briefly, then lower the heat). Add mustard, fennel, kalonji, methi and cumin and let them crackle for a few seconds.
  3. Add onions and fry until golden. Add ginger-garlic and cook for a minute.
  4. Add tomato purée, chilli, coriander and salt. Cook until the oil separates.
  5. Lower the heat, stir in the yoghurt gradually, then add the hot water and bring to a simmer.
  6. Add the fish slices in one layer and spoon the gravy over them.
  7. Cover and simmer for 10–12 minutes until the fish is opaque and flakes at the bone.
  8. Add green chillies and lemon juice, simmer for two more minutes, garnish with coriander and serve with plain rice or chapati.

Tip: Achari salan tastes even better after resting for 15 minutes off the heat, as the spices settle into the fish.

Recipe 3 (Lighter Option): Green Masala Grilled Pomfret

A fresh coriander, mint and green chilli paste brightens the rich flesh, and grilling uses only a little oil.

Serves: 3–4  |  Marinating: 20 minutes  |  Cooking: about 20 minutes

Ingredients

  • 2 medium Black Pomfret, Whole and Gutted, scored
  • 1 large bunch fresh coriander
  • ½ bunch fresh mint
  • 4 green chillies
  • 6 cloves garlic and a thumb of ginger
  • 1 tsp roasted cumin
  • Juice of 1 lemon
  • 1 tbsp oil
  • Salt to taste

Method

  1. Blend coriander, mint, green chillies, garlic, ginger, cumin, lemon, oil and salt into a thick paste with as little water as possible.
  2. Spread the paste over the fish, inside the cuts and belly. Refrigerate for 20 minutes.
  3. Heat a charcoal grill until the coals glow evenly, or preheat the oven grill to high.
  4. Oil the grate or a lined tray. Grill the fish for 7–9 minutes per side, turning once, until the skin is lightly charred and the flesh near the bone is opaque.
  5. Serve with lemon, sliced cucumbers and a simple yoghurt dip.

Kitchen Tips for Kala Paplet

  • Medium heat beats high heat for whole fish – the thick centre needs time to cook.
  • Use a wide spatula, or two, to turn whole fish without breaking it.
  • Pair the richer flesh with sour notes: tamarind, lemon, achar spices or raw mango in season.
  • If you want a softer, more delicate result, try the same recipes with White Pomfret and shorten the cooking time.

Bring Out the Bold

Whether it is crackling from the tawa, simmering in achari gravy or charring on the grill, Kala Paplet makes a meaty, satisfying meal. Frequently asked questions

Can I deep-fry whole Black Pomfret instead of shallow-frying?

Yes. Use enough oil to cover the fish, keep the heat at medium so the centre cooks through, and drain well before serving.

Can I use whole fish for the achari salan?

Slices work best because they cook evenly in the gravy. A small whole fish can be used, but it needs a wide pan and gentle turning.

How do I know the whole fish is cooked at the centre?

Insert a knife tip into the deepest score near the spine. The flesh should be opaque and lift easily from the bone, with no glassy or pink areas.

Can I bake the green masala pomfret instead of grilling?

Yes. Bake on a lined tray in a hot oven until the flesh near the bone is opaque, then finish briefly under the grill for colour.
