About White Pomfret (Safaid Paplet)

About White Pomfret (Safaid Paplet)

White Pomfret, known across Pakistan as Safaid Paplet, is the silver pomfret (Pampus argenteus). It is a flat, almost diamond-shaped fish with a small mouth, a short snout, shimmering silver skin and a deeply forked tail. It has no pelvic fins and very fine scales that rub off easily. For many Karachi households, a whole Paplet on the table signals a special meal, and it is one of the most sought-after fish in our fresh sea fish range.

Taste & Texture

The flesh is white, soft, fine-grained and delicately sweet, with a gentle flavour that does not overpower. Because the body is flat, the fillets on each side are thin and cook quickly. The bone structure is simple – a central backbone with fine side bones that lift away cleanly once cooked – so it is easy to eat off the bone with a little care.

Cutting & Cleaning Options

White Pomfret is offered as Whole (uncleaned), Whole and Gutted, Headless and Gutted, or Slices.

  • Whole and Gutted – the most popular choice; ready to score, stuff with masala and fry, grill or steam.
  • Headless and Gutted – easier to fit in a pan, still cooked on the bone.
  • Slices – thick cross-cut pieces, handy for salan and a quick tawa fry for larger fish.
  • Whole (uncleaned) – for cooks who prefer to clean at home.

Pomfret is not offered as boneless fillet; if you need boneless fish, look at our boneless range or contact FishMart for suggestions.

Best Ways to Cook

The classic Pakistani way is whole masala fry: score the sides, rub in red masala or green chutney masala, and shallow fry until crisp. White Pomfret also suits gentle methods that respect its delicate flesh – steaming with ginger and green chilli, baking in foil, or a light white karahi with yoghurt and black pepper. Thick slices work well in a mild tomato salan. Keep cooking times short and check that the flesh is opaque and lifts easily from the bone. For a firmer, richer flesh with a similar shape, try Black Pomfret (Kala Paplet); for chunky steaks, Surmai (King Fish) is a good contrast.

Storage & Handling

Refrigerate at 0–4 °C straight away and cook within 1–2 days. To freeze, wrap each fish tightly, press out the air and store at -18 °C. Thaw in the fridge, not on the counter, and do not refreeze once thawed. The soft flesh bruises easily, so avoid stacking heavy items on top, and use a separate board for raw seafood.

Keep chilled at 0–4 °C and cook within 1–2 days. To freeze, wrap each fish tightly, remove air and store at -18 °C. Thaw in the fridge and never refreeze raw pomfret once thawed.

Rinse gently under cold water and pat dry – the fine scales and soft skin damage easily. Handle on a separate raw-seafood board and keep the fish flat and cold until cooking.

How Much to Order

As a rough guide, plan on one medium White Pomfret per person for a whole-fish fry, or a larger fish shared between two. For salan with slices, around 1 kg typically feeds a family of four with rice or roti.

Cooking Tips

  • Score each side with two or three shallow diagonal cuts so masala reaches the flesh and the fish cooks evenly.
  • Keep marinating time short – 15–20 minutes is enough for this soft fish.
  • Fry in a wide pan so the fish lies flat; turn it once using a broad spatula.
  • Steam or bake in foil to keep the delicate flesh moist.
  • Season lightly – strong spice blends can hide the pomfret's natural sweetness.
  • Check doneness near the backbone at the thickest part; the flesh should be opaque and lift easily.

Nutrition

White Pomfret is a good source of protein, and like other white fish it is a lighter choice when steamed, grilled or baked.

Is White Pomfret the same as Black Pomfret?

No. White Pomfret is the silver pomfret, Pampus argenteus. Black Pomfret (Kala Paplet) belongs to the jack family and is not a true pomfret; it has firmer, darker and richer flesh.

Can I get White Pomfret as a boneless fillet?

White Pomfret is offered whole, gutted, headless and gutted, or as slices. Its thin, flat body is best cooked on the bone. For boneless fish, browse the boneless range.

How do I know if a White Pomfret is fresh?

Look for bright silver skin, clear eyes, red gills, a clean sea smell and a body that feels firm and springy rather than limp. Avoid fish with many bruises or a dull, yellowish tint.

Which cut is best for a whole masala fry?

Choose Whole and Gutted or Headless and Gutted. Score the sides, rub in the masala and shallow fry.

Why does pomfret break apart when I cook it?

Its flesh is soft and delicate. Turn the fish only once with a wide spatula, avoid stirring in gravy and do not overcook.
