About Red Snapper (Heera)

About Red Snapper (Heera)

Red Snapper, sold in Pakistan as Heera, is a name for several red-skinned snappers of the genus Lutjanus. These are reef and coastal fish of the Arabian Sea with rosy-red to pinkish skin, a strong, slightly arched profile, a large mouth and a single spiny dorsal fin. Because more than one red snapper species is sold under the Heera name, colour and shape can vary a little between fish – all share the firm white flesh that makes snapper so popular. It is a dependable all-rounder in our fresh sea fish range.

Taste & Texture

Heera has firm, moist, white flesh with medium-sized flakes and a mild, slightly sweet taste. It is not oily, so the flavour is clean and suits both bold masalas and simple lemon-and-herb seasoning. The flesh holds together well in gravy and on the grill. Bones are larger and easier to find than in many small fish, and the skin crisps nicely when fried.

Cutting & Cleaning Options

Red Snapper can be ordered as Whole (uncleaned), Whole and Gutted, Headless and Gutted, Slices, Boneless Fillet, Boneless Biscuits or Boneless Fingers.

  • Whole and Gutted – for the showpiece whole fried, baked or grilled Heera.
  • Slices – thick steaks on the bone for karahi, salan and tawa fry.
  • Boneless Fillet – skin-on or skinless pieces for pan-frying, baking and fish and chips.
  • Boneless Biscuits – cubes for karahi, tikka, pakoras and Chinese-style dishes.
  • Boneless Fingers – strips for crumbed fish fingers and quick snacks.
  • Headless and Gutted or Whole (uncleaned) – for cooks who portion at home or want the head for soup.

Best Ways to Cook

Whole Heera, scored and rubbed with red masala, is a favourite for frying or baking and looks impressive on the dinner table. Its firm texture makes it one of the better fish for karahi and white karahi, as the pieces stay whole. Boneless cubes are good for tikka and Lahori-style fried fish; fillets are excellent pan-seared with garlic and lemon. Snapper heads and frames also make a well-flavoured fish soup. Cook until the flesh is opaque and flakes easily. For a similar firm white fish with larger flakes, try Hamour (Gissar); for a softer, budget-friendly family fish, Mushka (Croaker) is popular.

Storage & Handling

Refrigerate at 0–4 °C on arrival and cook within 1–2 days. For longer storage, wrap portions tightly, remove air and freeze at -18 °C. Thaw in the fridge and do not refreeze raw fish once thawed. Snapper has sharp fin spines and stiff scales – handle whole fish carefully, and use a separate board for raw seafood.

Keep chilled at 0–4 °C and cook within 1–2 days. Freeze in airtight portions at -18 °C for longer storage. Thaw in the fridge and never refreeze raw snapper after thawing.

Watch for sharp dorsal spines and gill covers when handling whole fish. Rinse briefly in cold water, pat dry and use a separate board for raw seafood.

How Much to Order

As a guide, around 1 kg of Heera slices or boneless cubes makes a typical karahi for a family of four. For whole fried or baked snapper, a medium fish usually serves two, while a large fish can serve three to four with sides.

Cooking Tips

  • Score whole snapper deeply on both sides so heat and masala reach the thick flesh near the backbone.
  • For karahi, use slices or boneless biscuits and add them once the masala is fully cooked.
  • Pan-sear fillets skin-side down first and press gently so the skin stays flat and crisp.
  • A short marinade of 20–30 minutes in the fridge is enough – the mild flesh absorbs flavour quickly.
  • Use the head and frame to make a light fish yakhni or soup.
  • Check doneness at the thickest part: the flesh should be opaque and flake easily.

Nutrition

Red Snapper is a lean white fish and a good source of protein; grilling, baking or steaming keeps meals lighter.

Is all Heera the same species?

No. Several red snappers of the genus Lutjanus are sold under the name Heera, so colour and shape can vary slightly. All have firm, mild white flesh and cook in much the same way.

Which Red Snapper cut is best for karahi?

Slices give more flavour from the bone, while Boneless Biscuits are easier to eat. Both hold their shape well in karahi masala.

Can I cook Heera whole?

Yes, whole snapper is one of the best ways to enjoy it. Order Whole and Gutted, score it deeply and fry, bake or grill.

Does Red Snapper have many small bones?

Snapper bones are fairly large and easy to see, unlike the fine bones of some freshwater fish. Choose a boneless cut if you want no bones at all.

How do I tell if Red Snapper is fresh?

Look for bright red-pink skin, clear eyes, bright red gills, firm flesh that springs back and a clean sea smell. Faded, dull skin and cloudy eyes are signs of age.
